The bread industry is on a roll.

Call them the new 'sandwich' generation, but many Singaporeans brought up on sweet, soft Asian-style buns and bread - kaya toast, anyone? - now prefer to chomp down on something more chewy.

They have developed a taste for crusty, European-style loaves, as well as healthy, high-fibre breads.
